Laddu or laddoo or avinsh is a round shaped sweet originating from the Indian subcontinent.The name originated from the Sanskrit word Lattika. Laddus are primarily made from flour, fat and sugar. Laddus are often made of gram flour but can also be made with semolina or with chickpea flour.

Ingredients:
For Boondi:
Gram flour (बेसन) - 1 Cup
Water (पानी) - little less than 1 Cup (1 कप से थोड़ा कम)
Baking soda (मीठा सोडा) - 1 Pinch
Tandoori red food colour (तंदूरी रंग) - 1 Pinch
Oil (तेल) - For frying
For Laddoo:
Sugar /चीनी- 1.5 Cup
Water / पानी - 1.5 Cup
Cardamom powder / इलायची पाउडर
Saffron / केसर
Melon seeds / तरबूज,खरबूज के बीज
Procedure:
--In a bowl,take some Gram flour, put water in it gradually & make the batter of flowing consistency.Then put a pinch of Baking Soda & a pinch of Red Food Colour in the batter & mix them well.Put some hot Oil in the batter & make Boondi with the skimmer in the heated Oil.
--For Sugar Syrup,take a pan,put Sugar,Water,Cardamom Powder,Saffron & make sticky Sugar Syrup then turn the flame slow & put fried Boondi in it.Mix it well,cover it & cook it for 2-3 mins.Then put some roasted Melon Seeds & chopped Pistas then bind the Laddoos.In this way, halwai Style Boondi Laddoo will get ready at home.
