Ingredients:
For Bhajiyas or fritters:
- Urad/maash dal (Black Gram): 150 grams
- Bareek namak (Salt): 3/4th teaspoon
- Sabith hari mirchein (Whole Green Chillies): 3
- Kata hua hara dhaniya (Chopped coriander) : ½ cup
- Tel (Oil) for frying
Procedure:
- Mash ya urad dal 500 ml paani mein raat bhar bheegne ke liye rakh dijiye.
- Agli subah is bheegi hui daal se paani nithar lijiye.
- Is mein bareek namak aur hari mirchi daliye(agar aap theeka chahte hain tab paanch sabith hari mirchi daliye).
- In sab ko grind karke bareek paste bana lijiye, grind karne ke liye 1/4 cup paani ka istemaal kijiye
- Yeh paste ko 5 - 6 hrs fridge mein rakh dijiye.
- After 6 hrs, is paste mein aadha cup kata hua hara dhaniya daliye.
- Dedh teacup ya 180 ml paani daliye. Achhi tarah se milakar ise rakh dijiye.
- Agar aap dal ko peesne ke fauri baad dahi bade banana chahte hain, tab is mein do chutki khane ka soda daliye aur istemaal kijiye. Qameer aane par soda dalne se yeh bhajiye bahut tel (oil) pee lenge.
Dahi mixture ke liye (For curd mix):
- Dahi (Curd): 400 grams
- Bareek namak (Salt): 1 teaspoon
- Kata hua hara dhaniya (Chopped coriander): 1 tablespoon
- Kate hue pudine ke patte (Chopped mint leaves) : 1 tablespoon
- Lehsan ki pothi (Garlic cloves) : 5
Procedure:
- Dahi ko mixer grinder mein grind kar lijiye.
- Grind kiye hue dahi mein ek cup paani daliye aur achhi tarah se mila lijiye. Bareek namak daliye, lehsan ki pothi koot kar daliye, kate hue pudine ke patte aur kata hua hara dhaniya dalkar achhi tarah se milakar ise rakh lijiye.
Talne ke liye (For frying):
- Frying pan mein tel daliye Jab tel garam ho jaaye, is mein maash ki dal ke paste ko chamche se bhajiyon ki shakal mein daliye.
- Dono taraf inhe tal lijiye. Badami rang ke hone par in garam bhajiyon ko dahi ke mixture mein dalte jaiye.
Tadka dene ke liye (For tempering):
- Tel (Cooking oil): 1 ½ tablespoon or 2 tablespoons
- Sabith zeera (Cumin seeds): 1 teaspoon
- Sukhe lal mirch (Whole dry red chillies) : 5
- Rai (Mustard seeds) : 1 teaspoon
- Kari patta (Curry leaves) : handful
Procedure:
- Frying pan mein tel (oil) daliye.
- Jab tel garam ho jaaye, is mein sabith zeera daliye, sukhe lal mirch aur rai daliye.
- Inhe tal lene ke baad aanch band kar dijiye aur mutthi bhar kari patta daliye.
- Dahi aur bhajiyo ko iska bagaar ya tadka dijiye.
Mash ke dahi wade tayyar hain.
